You don’t have to head into Denver to find an elevated Italian dinner. Tucked away in Niwot, Fortezza Ristorante is bringing the food, wine and hospitality traditions of Northern Italy to Boulder County, with plenty of Colorado woven in along the way.
Fortezza opened in August 2025 and has already earned some attention, including a spot among 5280’s best Italian restaurants and recognition as one of the magazine’s best restaurant openings of 2025.
At the heart of the restaurant is a menu built around exceptional ingredients, careful technique and the Italian, French and Central European influences that distinguish the cuisine of Northern Italy.
🍝 Housemade Pasta Takes Center Stage
With National Pasta Day coming up October 17, Fortezza offers plenty of reasons to celebrate.
Nearly everything is made in-house, including fresh pasta and Fortezza’s 28-hour fermented focaccia. The restaurant’s seasonal menus change every two months, giving the kitchen an opportunity to showcase Colorado produce, meats and herbs throughout the year.

Recent pasta and risotto dishes have included:
🍤 Risotto al Gamberi with Acquerello rice, confit shrimp, smoked butter and kumquat agrodolce
🦆 Tagliatelle al Ragu d’Anatra with duck confit and pork ragu with fermented Fresno peppers
🎃 Agnolotti de Zucca with red kuri squash, pumpkin seeds, brown butter and sage
🍄 Bucatini al Funghi with porcini cream, pecorino Romano and mushroom conserva
The techniques may come from Europe, but much of what lands on the plate comes from considerably closer to home.
🌿 A Little Northern Italy, A Lot of Colorado
In Europe, some of the most memorable restaurants are found outside major cities, closer to the farms and producers supplying their kitchens. Fortezza brings a similar philosophy to Niwot.
The restaurant partners with nearby producers whenever possible, including Esoterra Culinary Garden for produce, Cheese Importers in Longmont for cured meats and cheeses, Callicrate Beef for American Wagyu and Dry Storage for grains and flour. Herbs are even grown in planter boxes on-site, tended by Slow Food Boulder County.

According to Fortezza, most ingredients travel fewer than 20 miles before reaching the kitchen.
That local sourcing carries into seasonal dishes like porcini-topped pasta, pork tenderloin paired with vegetables and black garlic, and duck breast served with root vegetables and black truffle-cherry jus.
🍷 Don't Miss Happy Hour
Want a taste of Fortezza without committing to a full dinner? The restaurant offers happy hour from 3:30–5 p.m. every day it's open.
Guests can find $4 off wine by the glass and house cocktails, $8 house wine, $3 off beer and specially priced starters and pasta, making it an approachable way to sample Fortezza's Northern Italian flavors.
There are a few other reasons to stop by early, too. Thursdays bring live music from 4:30–6:30 p.m., while Wednesdays feature wine specials.
🍽️ Make Sunday Dinner a Family Affair
Sundays take a different approach with Fortezza's Family-Style Sunday Dinner, served for $50 per person.
The meal begins with Fortezza's 28-hour fermented focaccia, followed by a three-course family-style dinner featuring salad, pasta and Wagyu ribeye, along with a few surprises.
It's a fitting extension of the restaurant's philosophy that great food is meant to bring people together, and a fun option for turning Sunday dinner into something a little more special.

🍷 And Then There's the Wine...
Fortezza's wine program has earned a Wine Spectator Award of Excellence, with a list that's approximately 90% Northern Italian and represents regions stretching from Rome to the Alps.
A Coravin system allows guests to try select rare and premium wines by the glass, while Fortezza's retail liquor license means diners can also purchase bottles to bring home.
❤️ A Homecoming for Fortezza's Owners
For owners Adam and Natalie Moore, opening Fortezza in Niwot was also a homecoming.
The couple grew up in nearby Longmont and met while bartending just three miles from where Fortezza now stands. Adam later spent a decade as general manager of Michelin-recommended Barolo Grill in Denver, where he met Fortezza Executive Chef Egan Ma.
During those years, Adam traveled to Northern Italy more than a dozen times, visiting producers, touring wine country and learning the culinary and hospitality traditions that would eventually influence Fortezza.
The restaurant's name tells a little of that story, too. Fortezza is Italian for inner strength, fortitude and the courage to follow your dreams.
After an initial restaurant space fell through, Adam tracked down the owners of a vacant Niwot restaurant with a sunken garden patio, despite there being no lease sign in sight. Within months, the space was theirs.
Today, Adam, Natalie and Chef Egan have built Fortezza around a simple philosophy: genuine hospitality, uncompromising quality and doing things the right way.
